The Serra x Woodblock Chocolate line is made with cacao beans and nibs from Peru, Ecuador, and Tanzania.
Woodblock Chocolate begins by hand-sorting every cacao bean to ensure that only the best beans are used in the process. Cacao beans are then roasted in small batches in vintage 1910 Royal drum coffee roasters in Portland, OR. After a refined roasting, Woodblock Chocolate separates the hull from the nibs. The nibs are then ground and aerated to further develop the rich flavor profile before being delivered to Serra’s workshop.
Serra x Woodblock Chocolate is aged for a few weeks before being tempered with pure CO2 oil, and then poured into the unique woodgrain chocolate bar molds. Once the chocolate sets, our confectioners’ hand-wrap each bar before delivering these treats to stores across Oregon, and soon California.
